| Tasting Notes: | Brilliant dark, garnet with aromas of Bing cherries, chocolate, coffee, fresh sage, and hints of a dry country road. On the palate, the luscious dark blackberry, raspberry, and cassis fruit is balanced by dry tannins of blonde tobacco, leather and dry oak leading into a lengthy finish. |
| Winemaker Notes: | The 2008 growing season was defined by several weather events. The year began as the third consecutive with drought conditions. This was followed by a killer frost in the third week of April, which contributed to the 30-60% below-average yields; yields which were expected to be higher after the small 2007 crop. Due to its short window of bloom, also known as “flowering”, Cabernet Sauvignon was the most heavily affected varietal in the state. As a winemaker, this is one reason I prefer to source single varietals from several different quality vineyard sites. Quality may be maintained when one vineyard has a bad year, and complexity will ideally be increased in the final blend. |
| Food Pairing: | This wine pairs well with many foods. We recommend starting with fruit compote and a cheese plate, then a Central Coast classic of fire-roasted tri-tip, and finishing with a rich bittersweet chocolate ganache. |
