Crisp and fruity, it is a natural and delicious partner to the casual regional cuisine & com-fortable lifestyle of the area. This 2008 is our inaugural Eos bottling, produced through ‘saignée’ or draining juice from red wine fermentors after less than a day of skin contact. The varietal selection evokes wines from the border area of Spain and France – Syrah, Merlot, Cabernet Franc, and Petite Sirah all play a part. This juice was then fermented very slowly in stainless steel tanks at cool tem-peratures; a process also employed in the production of highly aromatic white wines. Early bottling captures all the freshness and vibrance of the fruit.

Cellarmaster Gary Cargill celebrated his 20th year with Eos winery in 2008, leading the cellar crew, and developing a generation of skilled young winemakers in the process. For the past several years, the White Cabernet has been his own personal winemaking pro-ject, developing a cult following among our wine club members and tasting room guests. The 2008 is another great example of the noble Cabernet Sauvignon produced in an aromatic and fruit-filled semi-sweet ‘blush’ style. A testament to the passion Gary has for making winemaking fun for everyone. Open a bottle open with your own crew!

NOSE: The 2007 Zinfandel aromas fill the senses with the fruit of plum and dark berry pie with graham cracker crust. MOUTH: The aromas carry over onto the palate and are balanced by the acidic fruits of black cherry, raspberry and strawberry. FINISH: This wine finishes out with floral aromatics, subtle hints of oak, dry dusty earth, fresh tobacco that lingers and spices of white pepper and sage.

NOSE: Dark plum, raspberry, black cherry, and blueberry introduce this wine to the senses with hints of licorice, smoke, and leather. MOUTH: Bright fruit of raspberry introduces the palate to the darker fruit characters of blackberry, cassis, and blueberry leading into rich velvety textures. FINISH: A wonderful medium length finish with silky textures of leather, smoke, and bakers chocolate round out the wine.

Rich, dark tones of new leather and cigar wrapper are on par with deep blackcurrant and dried plum tones. Rich and full-textured, with firm tannins that should allow for mid-term cellaring.

Moscato "Tears of Dew"

Aromatically generous, with ripe stonefruit & lychee character. The Muscat Blanc grape brings a bouquet of floral tones to the nose – iris root, jasmine and orange blossom. Though intensely sweet, this vintage holds a crisp, lemony acidity which balances the wine nicely, and should confer good longevity to the primary fruit aromas.

Nose: Blackberry, molasses, sage and hints of smokey oak. Mouth: Big, rounded fruit flavors of blackberry, blueberry and cassis fill the mouth. The barely contained fruit has edges of leather, earth, tar and sage leading into the finish. Finish: The leather lingers on the palate with subtle hints of smoke, leaving the mouth watering for more.
